Fusilli with Kalamata Tomato Sauce

Ingredients1 # fusilli
Kosher salt
1 # ripe tomatoes, medium-diced
3/4 cup kalamata olives
1/2 pound fresh mozzarella, medium-diced
1/2 cup parsley, chopped
For the dressing:
5 sun-dried tomatoes in oil, drained
2 T red wine vinegar
1/2 cup extra virgin olive oil
1 garlic clove, diced
2 T capers, drained
1/2 t kosher salt
3/4 t freshly ground black pepper
Freshly grated Parmesan
InstructionsCook the pasta in a large pot of boiling salted water. Drain well. Place the pasta in a bowl and add the tomatoes, olives, mozzarella, and parsley.
Combine the sun-dried tomatoes, vinegar, olive oil, garlic, capers, salt, and pepper in a food processor until coarsley chopped.
Pour the dressing over the pasta and toss well. Garnish with Parmesan and serve.
