Bourbon Mushroom Sauce

Ingredients2 ounces bourbon
2 T minced shallots
1/4 t thyme
1/4 t cracked black pepper
2 T butter
1/2 cup sliced mushrooms
1/4 cup sour cream
1 t Dijon mustard
1 T Worcestershire sauce
Sea Salt
InstructionsIn a saucepan heat the whiskey, shallots, thyme and cracked pepper. Reduce by half over high heat. Add 2 T butter and melt. Stir in mushrooms and sauté until mushrooms darken. Add, sour cream, Dijon mustard, and Worcestershire sauce and reduce by half. Remove from the heat and season with salt, to taste.
